Abe and Paul have asked me (Ford) to blog about some of my favorite recipes that are healthy and I have found success with making at the Firehouse. I get the majority of my recipes from the IAFF-Fit to Survive website.

The first entry is Slow Cooked Chops with Apple-Cherry Stuffing
You will need:
A crock pot, cooking spray, (1) 6 oz. pkg of herb stuffing mix, (2) celery stalks chopped (1 cup), (1) medium size granny smith apple chopped (1 cup), (1) medium onion chopped (1/2 cup), (1) cup dried cherries, 1 cup of fat-free chicken broth, (6) boneless pork loin chops (about ½ inch thick each).
Directions:
Mix all the ingredients (except the meat) into a bowl.
Spray the inside of the crock pot with cooking spray and place half the mixture into the bottom of the pot.
Place the chops on top of the mixture and cover the chops with more of the mixture. From here you can make a few layers of meat and mixture if necessary.
Place the lid on the crock pot and cook on low heat for 6-8 hours or until the pork is tender. (The chops will be tender and can be cut with your fork!) Your serving size should be 1-2 chops and a spoon full of the stuffing. Pair the meal with a healthy vegetable and enjoy!…Ford
